Satay is a tradition of Southeast Asia that combines bright spices with sweet and spicy peanut sauce. This dish makes for an impressive cocktail party snack or an exotic appetizer infused with Eastern flavors.
Measure and combine all of the marinade ingredients into a large bowl. Whisk until well incorporated.
Cut the chicken breast into 1 inch cubes making sure to keep them as uniform as possible for even cooking.
In a mixing bowl, gently mix the chicken into the marinade until well coated. Cover with plastic wrap and refrigerate for 2 hours to marinate.
In a small bowl, whisk together all of the peanut sauce ingredients. Whisk until combined and set aside.
Place 5 to 8 pieces of chicken on each skewer, making sure to leave about 1 inch of space at the bottom for easy grabbing.
Add the oil then preheat the pan to 375°F/ 190°C (medium- high).
Add the skewers to the pan and sear for 3 minutes or until the edges begin to brown.
Turn each skewer to sear the second side and continue cooking for 3 minutes or until the sides begin to brown.
Turn each skewer to sear the third side, and continue cooking for 3 minutes or until the sides begin to brown.
Turn each skewer to sear the fourth and final side and cook for 3 more minutes or until the chicken begins to look brown on the sides.
Transfer the chicken skewers to a paper towel lined tray or plate. Continue the cooking steps until all the skewers are cooked and then turn the heat off.
Arrange the skewers on a serving platter, then drizzle with peanut sauce, a sprinkling of salt, and garnish with cilantro leaves. Serve immediately.
