This flavorful dish is a great side for the weeknight, or make a meal of it by topping with a quick fried egg.
Trim the broccolini to fit the pan. If any of the stems are bigger than 1 inch in diameter, you can slice them in half lengthwise.
Cut the sausage in half lengthwise, then cut it into thin slices.
Add the oil and preheat the pan to 350°F/176°C (medium). Tilt the pan to coat evenly.
Add enough broccolini to cover the bottom of the cookware making sure not to overcrowd. Cook for 4 minutes and stir occasionally.
Lightly season the broccolini with salt and black pepper.
Transfer the cooked broccolini to a plate or tray. Wipe the pan and return to the burner.
Add the oil and lower the temperature to 325°F/162°C (medium). Tilt the pan to coat evenly.
Add the sliced chorizo and cook for 1 minute and 30 seconds, stirring occasionally.
Stir in the shallots, garlic, and almonds. Continue cooking for 4 more minutes, stirring occasionally.
Return the broccolini to the pan. Season with the sherry vinegar and some olive oil. Stir to combine and continue cooking for 2 minutes.
Remove the broccolini from the pan and serve immediately.
